This spicy chipotle marinade adds a delicious kick of heat and subtle smoky flavor to all kinds of meat whether they are grilled or baked. Marinade full flavored fish such as salmon, chicken, pork, and beef for as little as four hours to give them that wonderful spicy, smoky flavor of flame grilled food even if it's not.

Chili Peppers:

• 2 dried chipotle pepper or 2 1/2 teaspoons chipotle powder
• 2 medium cloves garlic or a 1/4 teaspoon garlic powder
• 1 tablespoon mild chili powder such as Ancho Chile Powder or New Mexican chili powder
• 1 tablespoon cumin
• 1/2 cup lemon juice
• 1/2 cup teriyaki sauce

 

 If using whole chipotle peppers:

Reconstitute the seeded and stemmed whole chipotle pepper's in the lemon juice for half an hour.

Preparation:

Blend all the ingredients until smooth. Apply this marinade to proteins in a resalable container, I prefer a zipper bag that allows air to be squeezed out of the bag before sealing, and refrigerate for four to eight hours. Great with grilled foods. This marinade can be made up to a couple of days in advance and store in a tightly sealed container before use.
