Chili Powder Spice Blend:
Unlike the chili powders for sale in supermarkets across the country the
chile powders we sell are pure ground chile peppers with nothing else
added unless otherwise stated. Supermarket chili powders are a blend of
spices usually including chiles, cumin, garlic, and salt. They also commonly
include onion, oregano, coriander, allspice and even cloves. To make a chili
powder containing New Mexican chile powder, salt and :
combine one cup New Mexican chile powder with 1/4 cup ground cumin seed, 2
tablespoons garlic powder and 1 tablespoon each of salt and Mexican
oregano. The heat level can be adjusted by adding a tablespoon of
chipotle/cayenne
powder or more if you really like it HOT!

About New Mexican Chile
Powder |
Our New Mexican chile powder is made by grinding only high quality New
Mexican chile peppers. Nothing else is added. These chiles are a cross
between Guajillo and Californian chiles. New Mexican chile peppers are
medium in heat compared to other chile peppers, approximately 7 inches
long, 1-1/2 inches wide at the top and this crooked pepper tapers to a point at the bottom.
*When
ripe New Mexican peppers turn from a bright green to a rich red color with
smooth skin. They are then dried and ground into a fine chile powder that
has a hint of sweetness without any bitterness. The New Mexican Chile peppers ability to easily be dried and
then later added to all kinds of sauces and other cooked foods has made it a
favorite among chefs as was as chile pepper growers.
New Mexican Chiles peperes are also called Chile de
Ristra, chimayo chile, Dixon chile, and Hatch chiles.
