Creamy Chipotle Sauce |
In a saucepan place 10
chipotle chiles with
their stems and seeds removed and cut in half, 2 cup water, 1/4 cup apple cider
vinegar, 1/4 cup diced onion, 1 cup ketchup, 3 cloves crushed garlic, one
bay leaf, 1/4 teaspoon salt, 1/4 teaspoon Mexican oregano, 1/4 teaspoon
ground cumin and a pinch cinnamon and black pepper. Simmer on the lowest setting
until the sauce is reduced to one cup, about 1-1/2 hours. Blend the sauce and add
cream.

Raspberry Chipotle Sauce
|
Heat two tablespoons olive oil in a skillet
until oil just begins to smoke and add 1 cup fresh raspberries and two
tablespoons finely minced onion. Cook mixture, shaking one or twice, until berries
are caramelized. Add 1/2 teaspoon finely minced garlic and cook until just
soft, 1 minute. Add two tablespoons red wine vinegar and three tablespoons
sugar, 1 teaspoon chipotle powder, salt and blend into a smooth puree (add any
reserved juice from defrosted berries). Server this raspberry chipotle
sauce over white meats such as pork or
chicken.

1 small clove of garlic finely minced
|
 |
1 tablespoon red wine vinegar
|
 |
1 tablespoon brown sugar or to taste

1/2 teaspoon chipotle powder
|

1/2 teaspoon salt

Raspberry Chipotle Vinaigrette
|
To make a raspberry chipotle vinaigrette add three part olive oil to
every
part raspberry chipotle sauce made from the recipe above and mix
thoroughly.

1 cup fresh or defrosted Raspberries
|
 |
2 tablespoons diced onion
|
 |
1 small clove of garlic
|
 |
2 tablespoons red wine vinegar
|
 |
3 tablespoons brown sugar or to taste

1 teaspoon chipotle powder
|
For the whole recipe blend with approximately three cups
olive oil.

Creamy Chipotle Roux Sauce
|
This is a rich and spicy
creamy chipotle sauce that will add flavor to all kinds foods that will
be complemented by a rich, spicy and smoky sauce like this. Start by cooking onions and in butter just until the onions
begin to brown, slowly
add the flour mixed with chipotle powder while cooking over low heat until it is fully
incorporated. Add salt, cream, and increase the heat to medium, bring the
sauce to a boil while stirring constantly. Reduce heat to a simmer and cook for three minutes. Serve
warm and enjoy!
Ingredients:
1/2 cup butter
1/2 teaspoon chipotle
powder depending on taste
2 tablespoons finely diced onion
1/2 cup all-purpose flour
Salt to taste, about one teaspoon
4 cups light cream or coconut milk
