Chipotle Honey Vinaigrette
Ingredients: 1/2 cup red wine vinegar 1/3 cup honey 2 t whole grain mustard 1 1/4 t ground chipotle powder 1 t lime juice 3/4 t freshly ground black pepper 3/4 t salt 1/2 t smoked paprika 1/4 t garlic powder 1/4 t onion powder 1/4 t dried oregano 1/2 cup extra virgin olive oil Instructions: 1. Combine all ingredients by blending on low speed for ten seconds. 2. SLOWLY drizzle olive oil into blender on low speed.
Chipotle, Honey & Citrus Vinaigrette

Ingredients: Six seed chipotle peppers or 2 tablespoons chipotle powder 1/2 cp red wine vinegar Juice of one orange 1 small shallot One heaping teaspoon garlic Salt and pepper to taste 2 T honey Zest of one lime and one orange 2 cups olive oil Instructions: 1. If using whole chipotle peppers, first stem ,seed and lightly toast them in a dry cast iron skillet. Once crispy, grind them in a spice grinder or blender on high speed into a fine powder. 2. Combine remaining ingredients, except olive oil in blender and blend on low speed for ten seconds. 3. SLOWLY drizzle olive oil into blender on low speed.
