Ancho chile powder is made by grinding ripe poblano chile
peppers that have been air dried. This creates a chile powder that is mild in
heat, but rich in all those wonderful chile flavors! Our ancho chile
powder has that distinct chile flavor with nice fruity hints without all
the heat found in most chile powders.
Ancho Chile powder's flavor is an important foundation in many Mexican
recipes. Its is an important component of tamales, adobo, mole sauce, and
many other sauces.

Whole ancho chile peppers have some advantages over their ground
counterpart:

The whole chiles retain their flavors longer and can be
ground in a food processor or blender at any time make a super fresh
chili powder.
- Whole ancho chile peppers can easily be toasted in a dry skillet
releasing aroma, flavor, and creating new complex flavors. Toast each
side in a hot cast iron skillet for almost a minute.
- The whole chiles can easily be reconstituted in warm liquid,
seeded, stemmed and then be pureed as a base for sauces, added to chili,
and even stuffed for a delicious Anchos Rellenos.
Ancho Rellenos is a simple but delicious dish can be so much more than a poblano or
ancho chile pepper stuffed with melting cheese. Anchos Rellenos can be
baked as wells as lightly battered and fried. The fillings in this stuffed
pepper can vary widely and doesn't even need to include cheese. Try filling
them with a mixture of sautéed potatoes and spicy chorizo sausage, or
browned pork simmered in a hardy tomato sauce, or even chicken and
mushrooms in a creamy sauce. The possibilities are really endless.

About Ancho Chile Powder |
This
Ancho chili powder is made in Mexico giving it its authentic flavors. When
fresh, the chilies this popular chili powder is made from are called poblano
peppers. They are large dented chilies that can range from being some of the
hottest large peppers, to as mild as a standard green bell pepper.
Fresh Poblano peppers can often be found in well stock supermarkets and are
commonly seen stuffed in the popular Mexican dish Chiles Rellenos, or used
in chili verde, but can be substituted for bell peppers in
most dishes. When
Poblano chile peppers are allowed to fully ripen to a beautiful red color
and dried, they are called ancho chiles.
The dried Anchos are now a deep dark red color that almost looks black, have
a slightly smoky note in their flavor and remain mostly soft and pliable to
the touch. Theses Ancho chiles are then
lightly toasted to remove the remaining moisture in them and ground into the flavorful ancho chili powder that we sell.
Nothing else is added to it. Our ancho powder has none of the , salt or anti-caking
ingredients such as silicon dioxide found in other brands of chili powder .
