Chipotle Ham Glaze Ingredients
1/2 cup honey 1 teaspoon chipotle powder 1/3 cup orange preserves 1 tablespoon plus one teaspoon unsalted butter 1 tablespoon white wine



Chipotle Glaze Instructions
The most common mistake people make when glazing a ham is to apply the glaze to early in the cooking process and the sugar in the glaze burns. Glazes should be applied during the last ten minutes of cooking time and then again once the ham comes out of the oven to rest before serving. Mix all ingredients in a saucepan and cook over medium heat for 5-10 minutes or until the glaze reduces to about 3/4 cup while stirring occasionally. At 10 minutes before the end of the ham's cooking, or when its center is 100 degrees, remove the ham from the oven and brush with glaze. Return the ham to the oven and continue cooking until the glaze gets sticky about 10 minutes. Remove the ham, brush again with the chipotle glaze, loosely tent the ham with foil and let rest for about 10 minutes. Sever immediately.
