Cascabel, pronounced KAS-kuh-behl, are small
round chile peppers who seeds easy separated from the peppers allowing
them to bounce around inside the pepper when it is shaken and sound
something like a rattle or bell. This is exactly what the name "Cascabel"
means in Spanish, bell or little rattle. The Cascabel pepper are dark red-
brown
to black in color and small in size only measuring about one inch to an
inch and a half in diameter. Their
skin is thick smooth and shiny.
Our Cascabel Chili powder has a rich nutty flavor that is tannic with smoky
notes and an aroma that is bright and fruit. Its flavor lends itself to
compliant meats when incorporated into a sauce and also adds a nice chile flavor
to salsas.

These unique looking chili peppers start out on the plant like many other
peppers with a dark green color that then transitions into a dark
reddish-brown. They can be used fresh, but are almost always sold dried.
